Si and Dave served up a tasty roast squash salad as part of a vegetarian platter on The Hairy Bikers Home for Christmas.

The ingredients are: ½ large squash or pumpkin, peeled and deseeded, 2 tbsp olive oil, 1 tsp dried thyme, 3 garlic cloves, crushed, 150g baby leaf spinach or similar young salad leaves (such as beetroot leaves), 50g pumpkin seeds and salt and freshly ground black pepper.

For the dressing: 2 tbsp olive oil, 1 tbsp sherry vinegar, ½ tsp runny honey and ½ tsp wholegrain mustard.

Si and Dave served up a delicious Christmas croquembouche with 100 cardamom filled choux buns on The Hairy Bikers Home for Christmas.

The ingredients are: 235g butter, 330ml whole milk, 1½ tbsp caster sugar, 275g plain flour, 8 free-range eggs and salt.

For the spiced cream filling: 1 litre double cream, 100g icing sugar, 1½–2 tbsp coffee extract and 1 tsp ground cardamom.

For the caramel: 500g caster sugar.

To decorate: white sugar nibs.

Si and Dave served up turkey legs and breasts, chestnut and conference pear stuffing and roast potatoes on The Hairy Bikers Home for Christmas.

The ingredients are: 1 5.5kg turkey, split into crown and boned legs, fully thawed if frozen, 100g softened butter, salt and freshly ground black pepper.

For the stuffing: 15g butter, 1 onion, finely chopped, 600g sausagemeat, 200g chestnuts, crumbled, 1 pear, peeled, cored and finely chopped, 2 apricots, stones removed, finely chopped, 1 tsp allspice berries, ground, pinch freshly grated nutmeg, 2 large sprigs fresh thyme, leaves picked and chopped and 1 unwaxed lemon, finely grated zest only.

For the gravy: 2 tbsp plain flour, 600ml turkey stock and 100ml dry white wine.

Nigella lawson served up a tasty winter salad using radicchio, chestnut and blue cheese with a orange juice, lime juice, mustard and honey dressing on Nigella: At My Table.

The ingredients for the dressing are: 1 lime, juice only, 1 orange, juice only, 1 tsp wholegrain mustard, 1 tsp honey, 1 tbsp olive oil, 1 drop toasted sesame oil and pinch sea salt flakes.

For the salad: 1 large or 2 small heads radicchio, torn into bite-sized pieces, 100g vacuum packed chestnuts, broken up into small pieces and 100g sharp blue cheese, such as Gorgonzola or Stilton, cold and crumbled.

Nigella Lawson served up a delicious flour-less sunken chocolate amaretto cake with crumbled amaretti cream and ground almonds on Nigella: At My Table.

The ingredients are: 100g dark chocolate, 70% cocoa solids, roughly chopped, 100g unsalted butter, softened and cut into cubes, plus extra for greasing, 4 large free-range eggs, at room temperature, 125g caster sugar, 75g ground almonds, 2 tbsp cocoa powder, plus 1 tsp for dusting and 3 tbsp amaretto liqueur.

For the amaretti cream: 250ml double cream, 1 tbsp amaretto liqueur and 4 amaretti biscuits, crumbled.

Hugh Fearnley-Whittingstall served up a tasty vegetarian stuffed butternut squash and roasted potatoes with vegan gravy on This Morning.

The ingredients for the vegan gravy: 2 tablespoons rapeseed oil, about 100g (4-5 large) chestnut or open cap mushrooms, roughly chopped, 1 large or 2 medium onions, peeled and roughly chopped, 1 very large or 2 medium large carrots, peeled, halved lengthways and thickly sliced, 2 bay leaves, 1 large thyme sprig, 1 tablespoon plain flour, 750ml hot vegetable stock or water, 1 celery stick, roughly chopped, 2 tablespoons coffee (strong filter or cafetiere coffee is ideal), 1 tablespoon tamari or soy sauce, a splash of cider vinegar (optional) and sea salt and freshly ground black pepper.

For the potatoes: 1kg large-ish new potatoes, or waxy salad potatoes, scrubbed or scraped but left whole, 6 bay leaves, torn, 6 cloves garlic, peeled but left whole, 2 tablespoons rapeseed or olive oil, 2 teaspoons coriander seeds, roughly crushed, salt and pepper.


Bikers Christmas bang bang turkey salad with peanut sauce recipe

Simon and Dave served up a bang bang turkey salad with peanut sauce on The Hairy Bikers Home for Christmas.

The ingredients are: 1 tbsp soy sauce, 1 tbsp lime juice, pinch palm or light soft brown sugar, pinch hot chilli powder, pinch Chinese five-spice powder and 250g cooked turkey meat, preferably breast, in long strips.

For the peanut sauce: 1 tbsp vegetable or groundnut oil, 2 shallots, finely chopped, 3 garlic cloves, crushed or grated, 5cm piece fresh ginger, peeled and grated, 2 red chillies, seeds removed (according to taste), finely chopped, 200ml turkey (or chicken) stock, 150ml coconut milk, 75g crunchy peanut butter, 2 tbsp soy sauce, 1 tbsp rice wine vinegar, 1 tsp palm sugar or soft light brown sugar, 1 tbsp kecap manis (optional) and 1 tbsp lime juice.

For the salad: 1 large Chinese lettuce or cabbage, shredded, 1 large carrot, julienned, 1 large courgette, julienned, small bunch radishes, cut into matchsticks, 1 red pepper, cut into thin strips, 4 spring onions, halved lengthways and cut into thin strips.

To serve: 2–3 red chillies, sliced, small bunch fresh coriander, few fresh mint leaves and 1 tbsp roasted, unsalted peanuts, lightly crushed.

The ingredients are: 8 medium to large figs, 40-50g Stilton cheese, 8 slices Parma ham, 2 tsp honey, few thyme leaves, 1 tsp olive oil, salt and freshly ground black pepper.

For the salsa: 200g cooked beetroot, finely diced, 1 eating apple, peeled and grated, ½ small red onion, very finely chopped, few thyme leaves, few tarragon leaves, very finely chopped, 2 tbsp walnut oil, 1 tbsp cider vinegar and 25g walnuts, chopped.

For the topping: 50g plain dark chocolate, broken into squares, 50g white chocolate, broken into squares and 1 tsp icing sugar.

The ingredients are: 200g raisins, 1 large orange, finely grated zest and juice, 75ml spiced rum, 1 tsp ground allspice, ½ tsp freshly grated nutmeg, 1 tsp ground cinnamon, ¼ tsp ground cloves, 125g dark brown soft sugar, 4 free-range eggs, separated and 600ml double cream.

The ingredients are: 50g dried guajillo chillies, seeds removed, 4 large ripe tomatoes, 4 garlic cloves, skin on, 30g lard or 3 tbsp vegetable oil, 1kg braising steak, cubed, 1 large onion, roughly chopped, 1 tsp ground cumin, 1 tsp dried oregano, 4 allspice berries, bruised, 1 bay leaf, 1 tsp salt, 2 tbsp chipotles en adobo and 12–18 corn tortillas.

For the toppings: handful coriander, roughly chopped, 200ml soured cream, Lancashire cheese, crumbled, 1 avocado, stone removed, peeled and diced, 1 large onion, finely chopped and 4 radishes, finely sliced.

The ingredients are: 300g plain flour, plus extra for dusting, 1 tsp baking powder, 1 tbsp caster sugar, ½ tsp salt, 1 free-range egg, lightly beaten, 1 tsp vanilla extract, 15g butter, melted, 700ml corn or vegetable oil, for frying and cinnamon sugar.

For the guava or mango syrup: 300g light brown soft sugar, 8cm cinnamon stick, 2 strips orange peel, 1 star anise, 4 allspice berries, 1 lime, juice only, 1 orange, juice only, pinch salt, 1 tsp cornflour, mixed to a paste with 1 tbsp water and 350g guavas, quartered, or 350g mango, peeled, stoned removed and cut into 4cm chunks.
