Prue’s chocolate mini rolls with buttercream, test the contestants in the technical challenge on The Great British Bake Off 2017.

The ingredients for the sponge are: 60g cocoa powder, 30g butter, 1 tsp vanilla extract, 4 tbsp boiling water, 6 large eggs and 150g caster sugar.

For the filling: 150g butter, softened, 300g icing sugar and 1 tsp peppermint essence.

To finish: 200g plain chocolate, 70% cocoa solids, 200g milk chocolate and 100g white chocolate.

The ingredients for the spice mix: ¼ tsp ground turmeric, 1 tsp ground coriander, 1 tsp mustard seeds, 3 garlic cloves, roughly chopped, ½-1 Scotch bonnet chilli, seeds removed and 1 tsp sea salt.

For the coconut chicken curry: 8 chicken pieces (a mixture of thighs and drumsticks), Salt and freshly ground black pepper, 4 tbsp sunflower, 1 onion, roughly chopped, 500g butternut squash, peeled, seeds removed, cut into cubes, 1 aubergine, cut into cubes, 2 large waxy potatoes, peeled and cut into pieces, 1 x 400ml can coconut milk, 300ml pint chicken stock, 1 tbsp tamarind paste, 3 small bay leaves, 1 large ripe mango, peeled, core removed, chopped into 5cm pieces, 1 large ripe papaya, peeled, seeds removed, sliced, ½ lime, juice only and 1½ tbsp. rum (optional).

The ingredients for the sweetcorn salsa are: 4 corn cobs, 1 tablespoon ghee, 1 ripe mango, peeled and deboned, 1/2 red onion finely diced, 1 ripe red tomato, handful fresh coriander, Black salt, Chilli powder, Mango powder, Tamarind pulp, Ground roasted cumin, Honey and Salt to taste.

For the baby corn pakoras: Baby Sweetcorn cobs, 100 grams Gram flour, Chilli powder, Lemon juice and Salt to taste.

For the green chutney: 1 green chilli, Handful of cashews, Handful of coriander, Handful of mint, Golden sultanas, Lemon juice, For the Greek yoghurt, 1 tablespoon sugar and Salt to taste.

For the tamarind chutney: Tamarind pulp, seeds removed, Salt, Sugar, Chilli flakes, Cumin and Ginger.
